Ingredients
- 2 cups pureed pumpkin
- 4 eggs
- 1 cup oil
- 2/3 cup water
- 3 1/2 cups flour
- 2 2/3 cups sugar
- 2 tsp baking soda
- 1 tsp salt
- 1 tsp cinnamon
- 2 shakes of nutmeg (otherwise it will be too strong)
- 1 1/2 tsp vanilla
- Mix pumpkin, eggs, oil, and water in a large bowl.
- Mix in the dry ingredients.
- Stir in the vanilla.
- Grease and flour 2 bread loaf pans.
- Pour evenly into the bread pans.
- Bake at 350 for 1 hour.
- Let cool on wire racks.
- Enjoy!
This sounds yummy.... can you add nuts, etc. ?

Ms. Mona, you can add whatever you like to it. As for the pan size, I use the 9X5 size, but the 8X5 would be fine. Any smaller would require more than two pans so it doesn't overflow.
